So, here goes. I'm in the final stages of putting together my new
book, Planking Secrets DELUXE! which is due out next spring. In the
coming week or two I'm going to post as many new recipes I can on
this blog. Here's the first one. Watch for more.
Quick Cucumber Salsa
Makes about two cups.
Often, the simplest combinations are the best. This one tastes like
summer. Try it on grilled fish, spoon it over a cold soup or split
it between two bowls as a starter for a summer lunch.
1 cucumber
Juice of 1 lime
1 tsp.|5 mL chopped fresh dill
1 tsp.|5 mL sugar
Kosher salt
Peel the cucumber, cut it lengthwise into quarters, and remove the
seeds. Chop into a ¼ inch|6 mm dice. Add the lime juice, dill,
sugar and a pinch of salt. Use immediately.
